Next time you go to a summer BBQ, volunteer to bring some of this ^^ tomato-less salsa along! I love it, my Aunt made it all the time, and her daughter finally gave me the secret recipe. Tomatillo’s are not as sweet as tomatoes, but give a zangy twist to the traditional red, tomato salsa.
- half an onion
- 12-15 tomatillos
- juice of 1/2 lemon
- 2 cloves of garlic
- cilantro (optional)
- 1/2 jalapeno pepper (optional)
- a few pinches of salt
Cube onions tomatillos (to make it easier to blend), and put in blender. Then add lemon juice, garlic, cilantro & jalapeno. Add salt to taste (I added very little salt because the tortilla chips already so salty!). Enjoy!
